This week we are back in the AFC West as Kansas City looks to keep pace with the Broncos for the division lead, traveling to Oakland, where the Raiders are just looking for a win. The last time we had two AFC West teams squaring off on Thursday night, we went with fish tacos for the Chargers and green chili for the Broncos, so this time around we are going in a different direction.

Kansas City is known for its barbeque, but what many may not know is how popular the cinnamon rolls are. Chef Ingraham whipped up his verson of Stroud's restaurant's rolls. As for Oakland, not one food item stood out as the debate boiled down to taco trucks, chicken and waffles, or oddly enough, barbeque. We ultimately decided to go with Chef Ingraham's famous chicken and waffles to best represent that other the city by the bay.

Chiefs: Stroud's cinnamon buns

Ingredients:

 1 cup warm milk
 2 tbsp. margarine or butter
 1 tsp. salt
 ¼ cup sugar
 1 egg
 ¼ cup warm water
 1 tbsp. active dry yeast
 5 cups bread flour
 2 tbsp. cinnamon
 1 tbsp. nutmeg
 2 cups sugar
 ½ cup melted butter

Method:

1. In a small bowl, mix the ¼ cup of warm water, yeast and 1 tbsp. of sugar.
2. In a medium bowl, mix the remainder of the ¼ cup of sugar, milk, butter, salt and egg.
3. Add the yeast mixture and slowly begin to add the flour about 1 cup at a time.
4. Begin mixing with a spoon. As the mixture stiffens, use your hands to knead more flour into the sticky dough.
5. Once the dough is firm, dry and bounces back when poked, it is ready to rise.
6. Place the dough in a greased bowl and cover with a towel.
7. Place the bowl in a warm place and allow it to rise until it doubles in size. Punch down and let it rise until it doubles again.
8. Meanwhile in a medium bowl, mix the 2 cups of sugar, 2 tbsp. of cinnamon and 1 tbsp. of nutmeg.
9. Divide the dough into 12 roll-shaped pieces.
10. Roll the rolls in butter and then into the cinnamon sugar and place in a greased 9x12 baking pan.
11. Let it rise one more time until it doubles in size and bake for 15-20 minutes at 350 degrees.

Raiders: Chicken and waffles

Ingredients for buttermilk fried chicken:

 2 cups buttermilk
 6 garlic cloves, smashed
 1 large onion, thinly sliced
 2 tsp. smoked paprika
 2 tsp. cayenne pepper
 2 lbs. whole chicken wings, cleaned
 3 cups vegetable shortening
 3 cups all-purpose flour
 1 tbsp. garlic powder
 1 tbsp. curry powder
 1 tbsp. onion powder
 2 tsp. cayenne pepper
 Creole seasoning

Ingredients for waffles:

 2 cups all-purpose flour
 1/4 cup sugar
 1/4 tsp. salt
 1 tsp. baking soda
 4 tbsp. unsweetened cocoa
 1/4 cup butter, melted and cooled
 2 cups buttermilk
 3 large eggs
 1 tbsp. Kahlua
 3 tbsp. red food coloring

Method for chicken:

1. Whisk first five ingredients in a large bowl. Add the chicken; cover and chill overnight.
2. Melt vegetable shortening in a large cast-iron skillet. Heat over medium heat until shortening reaches 325°.
3. Mix the flour, garlic powder, onion powder, curry, and cayenne in a large brown paper bag.
4. Drain the chicken and season it generously with the creole seasoning.
5. Separate the chicken into two batches.
6. Add the first batch of chicken to the bag, roll top over to seal, and shake well to coat.
7. Fry the chicken in a skillet until golden brown and cooked through, 10–15 minutes per side.
8. Adjust seasoning to taste and repeat with second batch of chicken.

Method for red velvet waffles:

1. Preheat waffle iron and spray with non-stick cooking spray.
2. Add the flour, sugar, salt, baking soda, and cocoa to a large mixing bowl.
3. In a food processor, add the butter, buttermilk, eggs, Kahlua and red food coloring.
4. Pulse to blend; spoon half of the flour mixture into the processor; pulsing to blend before adding the last of the flour mix.
5. Spoon 1/4 cup of the batter evenly onto the waffle iron and cook to desired doneness.
6. Remove waffles as they cook and keep them warm until you are done.
7. Serve waffles topped with fried chicken and syrup of choice.
